Menu Plan Monday

MPM-Spring

I have really been trying to simplify my life.  I really do have a lot going on.

One area (thanks to the suggestion of my husband) that I decided to simplify is dinner.   I decided everyone with the exception of the 4 year old has an assigned night to cook dinner.  They each have to get their recipes to me by Monday mornings, so that I can grocery shop on Tuesdays.  Our dinner week actually goes from Wednesday to Tuesday. So here is our last weeks plan.

Tuesday:  I ordered Pizza.  I traded one of my kids that I would cook dinner if he would clean my bathroom.  Score!

Wednesday: Crock pot Chicken Curry.  This was a freezer meal I had in the freezer. It is what my brother chose for his meal.  I think he cheated.

Thursday: We had softball games so I made a tacos.

Friday: My daughter chose to do a campfire and roast hot dogs for her meal.  We were supposed to do it on Saturday, but since it was an 80% chance of rain that day we moved it to a day early.

Saturday: I wasn’t able to make a big Easter dinner like I wanted so I did it on Saturday.  We had Ham, Potatoes and Green Beans.

Sunday:  We were supposed to have Hash Brown Casserole, and I changed it to BBQ Chicken and Poutine. 

Monday: My son is supposed to cook Sloppy Joes and Veggies. 

Tuesday: I will do the Hash Brown Casserole.

Giving me 3 days off cooking and one of my other days I have my 9 year old help me.  As well as I have a small stock of freezer meals, from the freezer meal club I am in, I am getting a handle back on things.

Here is to creating less stress with a menu plan!

I had such a stressful week last week.  I know that not having a menu plan added hugely to that! 

This week, I decided that I needed to have a menu plan.  To ease up on the everyday stresses. 

Keep in mind that I have a fairly busy life so I try and keep it simple.  No judgment please.

Everyday, we will do get your own breakfast.  Whoever is around when Tyler gets up will help him get his. 

The choices will be:

  • Cereal
  • Toast and Jam
  • Eggs/Breakfast Burritos 
  • Toaster Waffles
  • Smoothies

For Lunch we will eat together except for Wednesdays when we have co-op and eat there.  I will rotate with a helper each day to make lunch. 

Monday- Orange Chicken and Fries

Tuesday- Cheddar Potato soup and rolls

Wednesday- Sandwiches Chips (Packed Lunch)

Thursday- Fish Sticks and French Fries

Friday – Spagettios

Our Dinner plans also have to rotate around some evening plans.

Monday- Salisbury Steak, mashed potatoes and green beans

Tuesday- Pork Stir Fry – Using leftover pork and rice

Wednesday- Sweet and Sour Oven Chicken, Rice and Broccoli

Thursday- Manicotti and salad.  I will pre-make the manicotti during the day.

Friday- Chicken Enchiladas, salad and refried beans.  I will also pre-make during the day.

I have high hopes that this planning ahead will pay off.  Even if I have to make another trip to the grocery store for Ricotta cheese, since I forgot it the first time.

Menu Plan Monday or not.

 

Blah!

Yea, I am aware it’s Tuesday…… uh, Wednesday. 

I decided to menu plan again.  I have loved using Simplified Dinners, and I will actually continue to do so.  I just wasn’t planning real well with it.  I love decided to still use it for the most part just adding in a few other recipes here and there.

It helps that I found a recipe set that I used to own and always regretted getting rid of at a yard sale this past weekend. 

I am also going to share one of our favorite quick lunch recipes, Ham and Cheese Roll Ups. 

Anyways.

Here goes. 

Breakfast:

Choices this week are: bagels, toast and egg, cereal or toaster waffles.  

Lunch:

Choices this week are: Leftovers, Breakfast Burritos, Speedy Pita Pizzas, Ham and Cheese Roll ups, Chicken Cesar Salad and lunch out one day.   Unless you are having leftovers you must eat what is made that day.

Dinner:

Monday- Pork Chops, green beans and potato wedges

Tuesday- Spaghetti Bake, cheesy biscuits

Wednesday- Sweet and Sour Baked Chicken, rice and broccoli.  (the leftover chicken will go in our chicken caesar salads for lunch)

Thursday- Taco Salads

Friday- Flank Steak with scallop potatoes

Saturday- Grilled Salmon, Ranch Red Potatoes and Salad.

Ham and Cream Cheese Roll Ups

Ingredients:

ham slices

cream cheese

crescent rolls

green onions

honey

mustard

mayo

Directions: mix 3 oz cream cheese with 1Tb honey and a few minced green onions.  Spread this mixture on an open crescent. 

Top with ham slice

mix 1Tb mustard with 1/4 c mayo and 1 Tb honey

Top ham slice with honey mustard mix. 

Roll up crescents and bake for 15 min at 350 degrees.

Menu Plan Monday

 

This week we are getting into our school-year routine.   I have now realized how busy our Thursdays will be, so I decided to pre-make that meal, (shepherds pie).  As I was doing that I thought why don’t I just brown the hamburger for taco’s and sloppy joes (lunch one day) at the same time.  While my roast for dinner was in the crockpot, I was boiling potatoes for mashed potatoes for Sunday dinner as well as some to go on top of the shepherds pie, I browned 5lbs of hamburger and then began preparing the shepherds pie, divided and seasoned out the rest.  I already feel on top of this weeks dinners.

Monday- Chicken Alfredo

Tuesday- Taco Pockets  (like tacos but made with rolls instead of shells)

Wednesday- French Toast and Bacon

Thursday- Shepherds Pie- Premade-   I just use ground beef, a can of veggies and a can of soup.  Layer it and top it with mashed potatoes.  Bake at 350 for 45 min.

Friday-  Either Homemade Pizza or go out to eat.

Menu Plan Monday

We will be doing a little bit of traveling both Thursday and Friday so I am going to wing it those nights, if we are home in time, I will cook something quick, if not we will stop for something somewhere.

 

Monday~ Chicken broccoli and brown rice casserole

 

Tuesday~ Leftover ham (from Sunday) breakfast casserole.  Made in the morning.

 

Wednesday~  Sweet and Tangy Sausage, hash browns done cowboy style.  Recipe below. 

 

Thursday~  Not sure, I will figure it out then.  So most likely fast food.

 

Friday~ Again not sure yet. 

 

Well it sounds pretty good to me.  All the meals are really easy with little prep work and little cleanup work.  LOVE IT!

 

Sweet and Tangy Sausage

2 packs Hillshire Farm Little Smokies.

1 jar grape jelly

1 jar chili sauce

 

Heat jelly and chili sauce in a sauce pan until incorporated, add Smokies and heat until cooked. 

 

If you don’t like Smokies you can substitute link breakfast sausage.

 

Cowboy Hashbrowns. 

Add any veggies you have into hashbrowns as they are cooking. 

Some examples

Onions, peppers, zucchini, spinach, celery, mushrooms.  You can add eggs as well if you wanted.

Menu Plan Monday



It’s here, it’s here.  It’s Monday once again.  Time to get this menu planned so I can move on with the rest of my week!  

No really, menu planning really does make my week go so much smoother, although I am still too spontaneous to commit to which meal goes on which night. 

I think we are not going to be having chicken this week, as we just got pet chickens and Katey is having quite a hard time adjusting to the fact that we eat them. 

So here goes;

Lasagna – garlic rolls – salad

Steak – baked potato – green beans

Breakfast for dinner – pancakes, bacon, eggs

Pork Roast – carrots - potatoes

Sweet and sticky pork chops with rice and stir fry veggies.

Leftover soup- using leftover veggies and meat from week.

Saturday- order pizza!

Menu Plan Monday



Ok, so our second week in our new house I still wasn’t able to order from the food co-op this week.  I am still figuring all that out.  I was able to plan the menu completely on my own as far as vegetables. (With the food co-op you don’t get to choose your fruits and veggies)

Monday- Lemon Mediterranean Chicken & Veggies, Garlic Bread

Tuesday- Salisbury Steak, Mashed Pots and Green Beans

Wednesday- Caribbean Pork Roast, Pasta salad.

Thursday- Paradise Pita Pockets (made with left over pork roast), Sweet Potato chips

Friday- Navajo Tacos

Saturday- Steaks with Potatoes and Onions, Green salad

Sunday- Roast Turkey and veggies, cornbread

Monday- Turkey Hash (made with leftover turkey)

This is my simple menu for this week!

Menu Plan Monday~ Moving Week

 

 

Monday- Soup Smorgasbord   (I want to use up all the soup cans that I didn’t have enough of to feed my family all the same kind of soup.  You know all those single cans.)  Also rolls.  Emily will be making chocolate chip cookies. 

 

Tuesday- A friend from my church is bringing us over dinner!  Yea for good friends!

 

Wednesday- truck loading day- Turkey pot pie, I premade this, so we just need to put it in the oven. 

 

Thursday- MOVING DAY! – order pizza at new house!

 

Friday – Crockpot bbq beef sandwiches.  (cook a roast in a crockpot, shred it, add bbq sauce and serve it on a hamburger bun with some chips.

 

Saturday – I don’t know yet.  Maybe go out to eat in our new town. 

 

Sunday – Unsure as well!  YIKES!

Menu Plan Monday

In an effort to be more financially fit this year.  I am going to take menu planning seriously.  So here we go, my first menu plan of 2011.




Since I will be shopping the ads and using coupons, my menu plan will revolve around that.



Monday:
     Breakfast- oatmeal
     Lunch- spagetti
     Dinner- ham and egg casserole

Tuesday:
    Breakfast- Cereal
    Lunch- sandwiches
    Dinner- Pork Chops

Wednesday:
  Breakfast- Cereal
  Lunch- Go out to lunch
  Dinner- Turkey, stuffing and potatoes

Thursday:
   Breakfast - Breakfast burritoes
   Lunch- frozen pizza
  Dinner- Turkey noodle soup

Friday:
  Breakfast-  Smoothies and toast
  Lunch- Turkey casserole
  Dinner- Tacos

Saturday:
   Breakfast- Waffles bacon and eggs
   Lunch- Tuna Salad Sandwiches
   Dinner- Baked Potatoes and Chili

Sunday:
   Brunch:  Pancakes, sausage and eggs
   Dinner:  Big Family Dinner (bring baked butternut squash as pot luck)

I am usually a spontaneous person by nature, so I will have to see how this whole planning out a week thing will work for me.    Next week I may just try planning 6 dinner, 6 breakfasts, and 6 lunches, and use them any day I feel like, and that will leave me some free meals to just wing it.
